We source local whenever possible.
In fact we feel so strongly about local that our chef, Tillie McDonald-Morton was born and raised right here in Georgetown… she may even have been grain fed with local grains as a child. Her cooking career also began here while she worked part time as a chef while attending York University and majoring in both Theatrical Production and Lighting Design and British History. After completing her studies Tillie pursued her passion and immersed herself in the world of the Culinary Arts full time.
Although Tillie is originally from Georgetown she hasn’t always lived here. Together with her fiancé (her other passion), Tillie spent the last 3 1/2 years in Western Canada. It was there that she was able to truly hone her skills and gather inspiration – inspiration that resonates soulfully through her food. She first lived and worked on Vancouver Island where she educated herself in the use and preparation of seafood. Her next stop was in Edmonton, Alberta where the natural inclination towards game meats proved enticing.
In August of 2013 Tillie and her fiancée returned to Georgetown to get married. After a beautiful, intimate ceremony in Cedarvale Park they journeyed back to Edmonton as husband and wife. Fortunately for Latitude their stay was brief and they returned to Georgetown before the end of the year. Tillie joined the Latitude team in January of 2014.
Tillie tells us that she never thought that she would have more than one home in Georgetown and now she finds herself with two. The first home she knew, the second is Latitude; a restaurant, company and staff that mirror and encourage her passion for food and excellent cuisine. All we can say is that we are ecstatic to have her with us and excited to share her with everyone who joins us for dinner, drinks or simple good times!
